Scampi that Keeps the Vampires away!
This is a very, very quick dinner that can be prepared in about 15 minutes. Start your pasta water first, and then chop the garlic and parsley. By the time you get all the ingredients together, the water is boiling. You will be eating in another 10 minutes.
One warning, this is quite heavy on the garlic. You can always use less, but I personally love the strong garlic flavor. However, if you’ve got a hot date later, I might save this recipe for a different night!

If you didn’t get my obscure reference to Big Fat Greek Wedding and the confusing bundt cake, then you seriously need to watch it again… :)
I’ve had this rose shaped bundt pan for going on 5 years from my favorite kitchen store, Sur la Table, and have never used it. I figured it was time. This is an old basic pound cake recipe from culinary school that I added almond extract to… Also, I didn’t have cake flour, so I just used All Purpose, and it still turned out great. Very tender, moist crumb with a slight almond flavor… Might be a bit more delicate with the cake flour, but just fine without.

Mahi Mahi with Mmmango Salsa
This dish is one of my favorite mid-week dinners. Its all of 30 minutes prep and maybe 10 minutes of actual cooking. Too easy for words, but looks tres chic.
The colors of the mango salsa are vibrant and makes for a very beautiful presentation. This is a great dinner to make when you have guests coming. I served it with steamed Jasmine rice and Sauteed Green Beans.

Grilled Greek Pizza
Yesterday I attempted grilled pizza again. I ‘winged’ it a few months ago, and it was… well, not so good. I rushed it, didn’t allow the dough to rest properly and did not roll it thin enough. The crust really puffed up and was quite thick and doughy.
However… I got smart this time, stretched it very thin and docked the dough before it went on the grill. It was… in one word… fantabulous!
I generally never make pizza dough. I buy it at a local pizza joint… it’s a whole whopping dollar for enough dough to make pizza for 4 people. You can also purchase it from many grocery stores. Ask the bakery department if they sell prepared pizza dough. My local Publix sells it, but someone from the bakery dept has to get it for you.

Flan-tastic
I asked Stephan what dessert he would like me to make for my first sweet tooth blog. Surprisingly… he chose flan, which is a super easy dessert to prepare. We (he) actually ate the whole Flan in less than 2 days… it was delish!
Since it was such a simple dessert, I had to (pardon the cheese) ‘kick it up a notch’ with a cookie to go with it. The recipe I used is a very basic tuile cookie, which is shaped like a curved roof tile. I love this recipe because it’s made with items I always have in my kitchen. Its a very easy and tasty cookie that can be whipped up in a few minutes.

A Peek in my Pantry
Since I’m actually organized for the first time in my life, I thought my first blog post should be about my pantry. I’m darn proud of my pantry and my fabulous rack… spice rack… that is. I’m a huge fan of using a lazy susan for spices, oils, vinegars, etc… so you can actually see what you have, without tearing your pantry apart. My previous pantry was so unorganized I would constantly buy things I already had. Never again!
I’ve purchased plastic containers for all my dry goods. Not only does it keep moisture and those lovely South Florida bugs out of your food, it’s much more organized than having boxes and bags of stuff everywhere. I even borrowed the label maker from my office and labeled everything… yeah, I’m a full-fledged kitchen geek.
