Ooooh, What a Tart!

My second Daring Baker challenge was Lemon Meringue Pie. Jen from The Canadian Baker was the host this month, and the recipe came from Wanda’s Pie in the Sky by Wanda Beaver. I decided to do individual tartletts, as I much prefer plating desserts with tartletts than pie or tart slices.


Overall, they were quite tasty, but I did have some issues with the crust. We’ll call it “rustic,” but deep down inside, I’m gonna call it ugly. I rushed it, and did not let it rest the required amount of time, so I know it was all my fault. It was very yummy, so I’ll live with the rustic look!

Due to all the weeping custards I was hearing about, I thought I’d be smart and broil the meringue in a very hot oven under the broiler, instead of baking. I babysat it for about one minute, and then turned around for literally thirty seconds, and (poo!!!) the tips were smokin’. It was just a tad bit darker than I would have liked, but again very tasty. I garnished the tart with passion fruit and raspberry sauces and blackberries sliced in half. I’m not usually a big fan of lemon desserts, but this one was quite good.lemon_tart_02.jpglemon_tart_04.jpg

    Ah, meringue does go from pure white to burnt and blackened in no time flat… Still, I wouldn’t have know if you hadn’t said anything, as they look nicely browned to me. Nice piping, too!

    Wow- your husband’s photos are definitely professional. Not that your tarts aren’t lovely, too!! I read your profile- I also went to culinary school, worked in kitchens for lots of years, and now just do it for fun. I miss the performance of the restaurant, and I’m enjoying blogging- it’s a nice way to have an audience again.

    Wow, I love this website. It hasn’t been shut since I found it :). The meringue is so cool! I love it. Unfortunately, every time I bake a lemon meringue, the pie won’t set and I’ve ended up with several different lemon “soups”

  • I did have this salad when we visited the Philippines! It was certainly delicious and very fulfilling. Although this dish is more Japanese in origin, that restaurant gave it its own twist. The Filipinos really have a good palate for excellent food! Anyway, thank you for the recipe. I will surely give this a try!
  • Absolutely mind-blowing. I tried doing spoons your spoons have a rounded bowl or a flat surface. Did many break if you were trying to push it in a little to make it have a little depth.
